
Aebleskiver Danish Pancakes
How to Travel the World during Quarantine:
Aebleskiver (or Ebelskiver) are puffy Danish pancake balls, typically made around Christmas time using an aebleskiver pan. While I am not sure everyone has access to an aebleskiver pan, I wanted to share this Nordic Pancake recipe with you all so you can see how this world traveler is handling a world in lock down. I found mine at an antique market in Asheville, you'd be surprised to see where these things show up once you start looking, they're not as obscure as I had imagined.
Ingredients:
2 eggs, whites and yolks separated
2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons butter, melted, plus extra for the pan
2 cups buttermilk
In a medium bowl, beat the egg whites with an electric mixer until stiff peaks form.
In a separate, large bowl, combine the dry ingredients (flour, baking powder, salt, baking soda, and sugar) and mix well. Add the egg yolks, melted butter and buttermilk and mix just until combined.
Gently fold the beaten egg whites into the batter, adding a little at a time until there are no white streaks.
Start by heating the aebleskiver pan over medium high heat, use a pastry brush to paint the wells with butter. When ready, fill the wells with 2 tablespoons of batter until about 3/4 the way full.
As soon as the batter begins to bubble, use a chopstick or fork to flip them over half way, letting the batter slide around to fill in the bottom of the well. The dough slides around in a circle in the wells until it makes a full sphere. The chop stick can be also be used to gently spin them around and make sure they're not getting stuck. Continue cooking for about 1-2 minutes until it turns golden brown.
